What’s great about it:
This recipe does not need added salt, as the feta is salty. Select low fat feta cheese to reduce saturated fats. The lime and mint give a fresh taste to the chickpeas full body.
Serves 6 | Prep time 5 minutes | Cook time 0 minutes
400g can chickpeas, drained
2 handfuls mint leaves, washed
1 lime, juiced
1 teaspoon lime zest
1 medium carrot, sliced into sticks
2 sticks celery, sliced into sticks
1/2 red capsicum, chopped into sticks
ADD chickpeas, mint, lime juice and zest and pepper to food processor
BLITZ until smooth
SLOWLY add feta, blitzing until it reaches the desired consistency
SERVE with selection of vegetable sticks.
