Sunshine Fruit Salad
What’s great about it:
Perfect for the summer months, this truly tropical Queensland fruit salad uses seasonal fruit, ginger, and orange juice.
Served with Greek yoghurt this makes for a great breakfast, afternoon tea or dessert.
Serves 6 | Prep time 20 minutes | Cook time 50 minutes
1 cup strawberries, roughly chopped
1 small pineapple, skin removed and chopped
½ small Paw Paw, peeled and chopped
1 mango, peeled and sliced
1 tablespoon ginger, grated
2 oranges, juiced
2 passionfruit, pulp
2 cup natural yoghurt, reduced fat
COMBINE fruit in a large bowl.
MIX ginger, orange juice and passionfruit pulp in a small jug and drizzle over fruit.
SET aside in the refrigerator until cool.
SERVE with yoghurt.
