Spicy dried apple and pecan trail mix

What’s great about it:

A great little snack to change things up. Packed with fiber and dried fruit, the spice adds something different while still being moreish and healthy! Keep stored in a jar and prepare for the kids or household lunches.

Ingredients

180g pecans

2 apples, cored and sliced thinly

¼ cup water

2 limes, juiced

2 teaspoons chilli powder or paprika

2 teaspoons cumin, dried

2 teaspoons nut oil (e.g. macadamia oil)

A sprinkle of pepita seeds (pumpkin seeds)

¼ cup cranberries, dried

2 cups of popcorn, pre-popped, unsalted & unbuttered

 

 

Method

 

PREHEAT the oven to 90-100oC.

SOAK apple in a large bowl with the water and lime juice for 10 minutes.

PAT apple slices dry with a paper towel and arrange in a single layer on a lined baking tray.

SPRINKLE with half of the chilli powder and cumin.

BAKE for 90 minutes. Turn over apple pieces after 45 minutes.

PLACE pecans, lime juice, chilli powder, cumin and nut oil in a bag, tossing until pecans are coated.

BAKE on a lined tray for 15 minutes.

COOL apple and pecan on tray.

COMBINE apple, pecans, cranberries, seeds, and popcorn.

STORE in an airtight container or jar.
