LEMON, COCONUT & APRICOT BLISS BALLS

Thinking about Christmas in July? These bliss balls are jam packed with flavour and have a serve of dried fruit in each ball. The combination of lemon, coconut and apricot will have you in the Christmas spirit in no time.
Serves 8 | Prep time 20 minutes | Cook time 0 minutes
1 cup raw cashews
1 1/4 cup desiccated coconut
120g dried apricots, roughly chopped
½ teaspoon vanilla extract
3 tablespoon maple syrup
1 lemon zest, grated
1 lemon – juice (modify to taste)
½ cup desiccated coconut for rolling each bliss ball in
PLACE cashews, coconut, apricots, vanilla extract, maple syrup, lemon zest & lemon juice into a bowl & mix with a spoon.
BLITZ the mixture in a food processor on high speed until smooth.
ROLL the mixture into balls with your hands, roll in coconut & place in the fridge to set.
