Recipe – Breakfast Eggs

BREAKFAST EGGS 

What’s great about it:

Eggs in the morning are a great way to start the day. Here is a fun and colourful alternative to the humble fried egg. Cracked into capsicum rings they provide the family an added veg boost plus best of all, the kids will love them too.

Serves 4 | Prep time 10 minutes | Cook time 15 minutes

Ingredients

1 large red capsicum, de-seeded and cut into 1cm rings
4 eggs
4 cups spinach or asparagus shoots
4 slices wholegrain bread, toasted
1 tablespoons chives, chopped or Paprika to sprinkle

Method

HEAT a frypan over a medium heat and lightly spray with olive oil.

PLACE the capsicum rings in the frypan and crack an egg into the centre.

COOK to taste.

ADD spinach or asparagus to a separate frypan and cook.

SERVE with toast and sprinkle eggs with chives.
