Recipe – Beetroot Dip


What’s great about it:

Love hummus? Why not try adding some beetroot? Beetroot adds extra fibre and a great source of nitrates and colour. 

Enjoy with wholegrain crackers or vegetable sticks.

Serves 4-6 | Prep time 15 minutes | Cook time 0 minutes


Beetroot hummus


1 medium beetroot (roots and leaves removed)
400g chickpeas
½ teaspoon cumin
1 lemon, juiced
1 tablespoon tahini
2 garlic cloves
¼ teaspoon salt
½ teaspoon olive oil
2 tablespoons vegetable stock
sweet paprika (to taste)
300g vegetables sticks (carrot, celery, cauliflower, capsicum)



STEAM beetroot on high in a microwave safe bowl with lid for 10-12 minutes, slip cooked beetroot out of its skin.
ADD beetroot and remaining ingredients (except vegetable sticks) to food processor and blend until smooth.
ADD 1 tablespoon of vegetable stock between blitzing.
SERVE with vegetable sticks.
