Recipe – Avocado, strawberry and macadamia dessert


What’s great about it:

If you love apple crumble but want to try something different – why not add a banana. Best of all, using fruits in desserts is a great way to replace added sugars. We love that this recipe has mixed nuts and seeds as a source of healthy fats.

Serves 12 | Prep time 20 minutes | Cook time 10 minutes | Chill time 90 minutes


 Avocado Strawberry & Macadamia Dessert 0001.1



1 cup fresh dates, chopped

3 ripe avocados

1 cup milk or coconut milk, reduced fat

2 tablespoons cocoa

1/2 teaspoon cinnamon

1 teaspoon of vanilla

2 cups strawberries, diced

2 tablespoons honey

1/2 cup macadamias, finely chopped



BLEND dates until smooth, add avocado flesh and blend, then add milk and mix until smooth.

MIX in cocoa, cinnamon and vanilla. Chill until ready to serve.

HEAT 1 cup of diced strawberries, honey and 1 tablespoon water, mixing until fruit is soft and syrup  begins to form.

REMOVE from heat, mash and sieve mixture.

REFRIGERATE coulis until ready to serve.

DECORATE mousse with diced strawberries, drizzle with coulis and sprinkle with macadamia nuts.
