APPLE AND BANANA CRUMBLE
What’s great about it:
If you love apple crumble but want to try something different – why not try adding the humble banana. Best of all, using fruits in desserts is a great way to replace added refined sugars. We love that this recipe has mixed nuts and seeds as a source of healthy fats and no added sugar.
Serves 6 | Prep time 15 minutes | Cook time 30
2 cups apples, stewed or canned
1 cinnamon stick
1 lemon, zested
4 tablespoons water
1/2 cup rolled oats
1/4 cup oat bran
1/4 cup sultanas
1/4 cup mixed seeds and nuts
1 tablespoon yoghurt
PREHEAT oven to 160°C.
PLACE apples in saucepan with cinnamon stock, lemon zest and water.
BRING to boil over heat, reduce to simmer and cover for 15 minutes. Stir occasionally.
PLACE banana and apples in a greased pie dish.
COMBINE the oats, oat bran, sultanas, mixed seeds, nuts and yoghurt.
SPREAD the oat mixture over the apples and banana.
BAKE in oven until lightly browned, approx. 30 minutes.
