Parsley and Basil Lemon Pesto Dip

What’s great about it:

Pesto is delicious on pasta, bread and even as a marinade. It is a great way to use up leftover herbs and flavour food without added salt. This pesto has a zest of lemon which can be used as a spread or mix with olive oil and yoghurt for a dressing.

Serves 10 | Prep time 10 minutes | Cook time 0 minutes

1 tablespoon pine nuts, toasted

2 tablespoons hazelnut, toasted

1 cup parsley fresh, washed

1 cup basil fresh, washed

2 cloves garlic, fresh with skin removed

1/4 cup parmesan cheese, grated

1/4 cup Light Extra Virgin Olive Oil

½ lemon, juice




ADD all the ingredients except the oil and lemon juice to a food processor.

BLITZ for a few seconds before slowly adding the oil.

TURN food processor off and add half the lemon juice.

TASTE and add more lemon juice if required.
