Easy Veggie Packed Pizza

Who doesn’t love a delicious pizza? Leave the guilty pleasures behind by making this pizza packed with veggies. Clear out the fridge and add any leftover veggies to this pizza, top with fresh herbs for added flavour and a hint of freshness. It is a great way to use up leftovers and add veggies to your daily diet.

Serves 4 | Prep time 10 minutes | Cook time 20-25 minutes

 

Ingredients

1 tablespoon polenta (cornmeal)
1 cup Greek yoghurt
1 1/2 cups self raising flour
1/2 tablespoon extra-virgin olive oil
1/2 cup pizza sauce
1/2 cup leftover cooked vegetables such as potato, sweet potato, sliced thinly
1/4 medium onion, purple
1/2 cup red or green capsicum, sliced
1/4 medium zucchini, sliced thinly
1/4 avocado, diced
1/4 cup mushroom, sliced
1/2 cup spinach, basil, mint leaves
1/2 cup cheese, low fat mozzarella or cheddar

Method

PREHEAT oven to 230oC.
SPRINKLE baking paper on baking tray with polenta.
COMBINE yoghurt and flour in bowl until they just come together.
KNEAD on well-floured surface until smooth, add more flour if sticky. This may take up to 10 minutes. Rest the dough for 5 minutes.
SHAPE the dough into two (round or square) pizza pieces.
PLACE dough shape on baking tray and brush with extra-virgin olive oil.
SPREAD pizza sauce evenly over dough.
TOP and top with a selection of vegetables.
SPRINKLE the grated cheese on top and bake for 10-15 minutes.
