Who knew chocolate brownies could be made healthier. The added beans are a count towards your getting more vegetables into your day. Enjoy this health-i-fied treat!
Serves 12 | Prep time 5 minutes | Cook time 15-18 minutes
400g beans (black beans drained, rinsed)
1/3 cup maple syrup or agave
1/2 cup quick oats
1/2 teaspoon baking powder
2 tablespoon cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon stevia or 1 tablespoon sugar
1/4 cup vegetable oil
2 tablespoon chocolate chips
4 bananas or seasonal fruit
PREHEAT oven to 170ºC. Lightly grease a loaf tin with grease proof paper.
COMBINE beans, maple syrup, quick oats, baking powder, cocoa powder, vanilla extract, stevia, egg and vegetable oil in food processor. Blend until smooth.
SPOON batter into tin. Sprinkle chocolate chips over the top.
BAKE in oven for 15-18minutes, cool before slicing.
SERVE with sliced banana and a dollop of yogurt.
